Rancho Liborio

The red chili at this Mexican market is outstanding. Granted, this is not the kind of chili you'd pour over tamales. With chunks of pork (or sometimes beef) swimming in a deep red sauce, it could overshadow just about anything it covers. The combination is wonderful, but don't forget the star here: a sauce that is grainy with chiles and imparts a rich, earthy flavor. Also pretty interesting is Rancho Liborio's green - stew meat in a bright sauce spiked by a citrus tang.
