Trinity Brewing Co. - 1466 Garden of the Gods Road, 634-0029, trinitybrew.com - You can’t much cooler than a menu that pairs items like Belgian fries and a beer of the restaurant’s making (it’s Sunna Wit, by the way). While the beer is certainly the star — along with the hip atmosphere — any place offering a bacon cone (five pieces of honey cured bacon served with maple syrup) is thinking about the food, too.
RECOMMENDED DISH: Portobello sliders $
A good brewery with food that’s also is kinda interesting, including salmon sliders and the bacon cone.

From the old to the new: Trinity Brewing is almost four years old and is tucked in the corner of a boxy, modern strip mall. Sitting on the sunny patio, however, the view of the parking lot is easily forgotten with Pikes Peak shining in the distance. Eco-minded, organically oriented, often vegetarian and focused on creative craft beers, Trinity is the perfect embodiment of the slightly crunchy, hippie side of Colorado’s personality. (Full review)
